Steam Fish Lemon Chilli

When i was came again in MEDAN (my home town), i always miss for cooking some food. And once upon a time, I was so hungry for waiting my dad come back home to bring fast food for me. Why do not i try it to cook is in the freezer? Fish and lemon. What do you do, if you met both of the ingredient? Fish fried? Fish sauce? grilled fish? If I were you, I would not cooked the fish as usual. I will cook this fish into healthy food was quite without fried or baked so long. So? Why do not i try it? ehhehehehee ...

I never thought that i can cook this food perfectly... 
but i have succeeded,,,!!!*My BIG MOM said*
so i wanna share the special recipe from me to all of you...

 LET's Get cOOking "ToGethEr"!!! YEYYYY...

Ingredients:
4 clove fresh garlic (chopping)
2 clove Spanish onion (slice)
1/2 clove onion (slice)
2 pieces of red chillies (slanted cut)
2 pieces of green chillies (slanted cut)
1/2 paprika (have to sliced being 2 inches)
2 cm ginger (have to sliced being 2 inches)
1 stalk lemongrass ( cut become 2 and then crushed one by one ) 
4 tablespoon lemon juice
2 tablespoon olive oil

Additional Ingredients :
1  teaspoon salt
1  teaspoon sugar
2 tablespoon sesame oil
1 tablespoon fish sauce
1 1/2 tablespoon oyster sauce
1/2 teaspoon black pepper
1 1/2 teaspoon chicken bouillon powder

Method :
Step 1 :  Add the fish on the flat plate. Slashes on both sidesthen coat both sides with lemon juice and give a little salt. Massage all parts of the fish to make lemon juice absorbed into the meat. Wait until 8 minutes. To wait for the fish absorbed lemon juice, you should to frying all the available spices.

Step 2 : In a large frying pan heat add olive oil, and frying garlic until smell out, after that add onion, spanish onion... and then add all chillies, paprika, ginger, lemongrass. Stir briefly and then add all additional ingredients to taste and mix again.

Step 3 :  Put the fish into the middle of fying pan, then close until cooked on one side, and then reverse and cook until the fish was cooked perfectly. ( 3 minute )


TIPS :
1. Don't frying chillies and paprika so long, as it will damage the color of final appearance.
2. Redeeming the fish who are so thick meat fish such as pomfret, white pomfret or u can use thick fleshy fish such as salmon, but you have to cut a little thinner than its previous size.
3. If you like basil leave or tomato, you can put it as garnish or put into the food before you served on the plate.
4. Don't use too much lemon juice if you don't much like the sour taste of lemon.
